White Texas Sheet Cake
1 cup butter
1 cup water
2 cups flour
2 cups white sugar
2 eggs
1/2 cup sour cream
1 tsp almond extract
1 tsp salt
1 tsp baking soda
Bring butter and water to boil; remove from heat and stir in the rest of the ingredients until smooth. Pour into greased 15x10x1" bar pan and bake at 375 degrees for 20-22 minutes.
Frosting
1/2 cup butter
1/4 cup milk
4 1/2 cups powdered sugar
1/2 tsp almond extract
1 cup chopped walnuts
Bring butter and milk to boil. Remove from heat. Add powdered sugar and almond extract and blend till smooth. Stir in walnuts. Spread over warm cake.
Banana Brownies
1 cup chocolate chips
1/2 cup all purpose flour
1/2 cup white sugar
1/2 tsp baking powder
1/4 tsp salt
2 large, ripe bananas, mashed
2 eggs, well beaten
1 tsp vanilla
1/2 cup chopped pecans
Preheat oven to 350 degrees. Grease a 9" square pan.
Melt chocolate chips in microwave on low power, stirring frequently. Cool slightly, about five minutes.
Mix flour, sugar, baking powder, and salt together in a bowl. Add melted chocolate chips, bananas, eggs, and vanilla. Beat with electric mixer until well blended. Stir in pecans. Spread in pan.
Bake until top is dry and edges have just started to pull away from the sides of the pan, 30-35 minutes. Let cool about 25 minutes.
Frosting
3 tbsp. butter
2 tbsp. cocoa
1 1/2 cups powdered sugar
2 tbsp. milk
Combine butter and cocoa powder in a saucepan over low heat; cook, stirring constantly, until smooth, about 3 minutes.
Stir in powdered sugar and milk, 1 tbsp. at a time, until frosting is of spreading consistency.
Spread over cooled brownies. Cut into squares.
Surprise Banana Cake
1 cup white sugar
1/2 cup butter

4 ripe bananas, mashed
2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped walnuts
1 tsp vanilla

Zucchini Plum Bread
2 cups shredded zucchini
1 cup vegetable oil
1 cup white sugar
1 cup packed brown sugar
3 eggs
2 tsp vanilla
2 cups all purpose flour
1 cup whole wheat flour** (all white flour may be used)
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp baking powder
3 cups chopped, pitted plums
1 tbsp. white sugar
1 tsp cinnamon
Preheat oven to 350 degrees. Grease two bread pans.
Whisk zucchini, oil, 1 cup white sugar, brown sugar, eggs, and vanilla in bowl until well mixed. Combine all-purpose flour, whole wheat flour, baking soda, salt, 1 tsp cinnamon, and baking powder in separate bowl.
Gradually stir flour mixture into zucchini mixture until batter is just combined. Fold in plums. Pour batter into prepared pans.
Mix 1 tbsp. white sugar with 1 tsp cinnamon together in small bowl. Sprinkle over batter.
Bake in preheated oven until toothpick inserted in center comes out clean, about 1 hour. Cool in pans 10 minutes before removing to wire cooling racks.
