Sunday Late Night

There was a strong wind from the west today, but a lot of snow melted.
I saw two red tail hawks (separately--one in a tree and one on a pole).
The air smelled like wet earth--a good spring-like smell.
I went grocery shopping and spent a lot of money. I bought only healthy groceries except for a 12 pack of diet coke and a small bag of mounds mini bars. Wish i had one up here with me now.
I cooked a pot of spaghetti and a big pan of Mexican Crescent Bake, which, for your information, is DELICIOUS.
It is easy to make and you should all try it.
Mexican Crescent Bake
Press Pillsbury crescent roll dough into the bottom of a 9x13" cake pan so that it covers the bottom and goes about 3-4" up the sides.
Brown hamburger and chopped onion (to taste, I use a medium sized onion)
Add a 16 oz can of refried beans.
Sprinkle with 1/2 to 1 package of taco seasoning (to taste, I believe less is more.) and cook until mushy.
Meanwhile, mix a small container of sour cream, one egg, and 2 cups of shredded cheddar cheese in a medium sized bowl.
Slice 1/2 to 1 cup of olives (to taste)
Spread the hamburger mixture evenly over the crust.
Sprinkle liberally with olives.
Spread the sour cream mixture evenly over the hamburger and olives.
Crush taco (I use nacho) chips and spread generously over surface.
Bake at 375 degrees for 25-30 minutes.
Let sit for about five minutes when it comes out of the oven.
Serve with salsa.

Trust me. You will LOVE this dish!

Date: 2006-02-27 09:14 pm (UTC)Think how awful it would be if my stuff was just snubbed.
I'm delighted that you liked the scarf and hat!
Making them was a hoot.
:)

Date: 2006-02-27 09:30 pm (UTC)I can't find my taco casserole recipe but...
Date: 2006-02-28 04:14 am (UTC)In a baking dish you layer:
Fritos on the bottom, layer of seasoned, browned ground hamburger(any way you like it, add onions if you like) and kidney beans, layer of grated cheese, Fritos, meat/beans, cheese, etc. You end with a layer of Fritos and sprinkle cheese on top of the Fritos. You can also include sliced black olives with each layer of meat/beans.
Then you bake it until it's hot, bubbly and the cheese is melted and a little brown and crunchy.
I'm sure you can figure something out.
It's great with a side of rice, refried beans and a green salad.
